Product Description
Coral trout are often red or orange in colour, but they can also be black, through to brown-green, tan and pink. All individuals have a profusion of small blue dots covering their entire upper body. Adult coral trout usually grow to between 35 and 80cm and about 0.8-9.0kg, however they have been known to grow up to 120cm and 28kg. These fish are sexually mature at around 4 years of age (approx. 34cm) and an interesting fact is that they first mature as females then change to males later in life (from around 4 years of age). Coral trout are home-ranging, moderately sedentary fish that associate with specific areas of reef slope for several months. They feed during the day and exhibit different strategies of feeding depending on the time of day. At dusk they use an ‘ambush' strategy, whereas at dawn they ‘prowl'. Juveniles feed on crustaceans living amongst the corals, while adults feed on reef fish including damselfish, fusiliers and hardyheads.
Texture and Taste
One of the best eating fish you could try. A nice white flesh with a soft texture. Mild in flavour they will suit all tastes.

Cooking
Well suited to most types of cooking. Important not to handle too much during cooking. Being careful to not overcook.

The Caesar and Prawn Recipes Salad

Ingredients
2 tbs plain flour
2 tbs Schwartz Fish Simply Shake Seasoning
4 x 150 g (5 oz) trout fillets, wiped
450 g (1 lb) potatoes, diced
1 packet Schwartz Garlic & Herb Mashed Potato Seasoning
25 g (1 oz) butter
450 g (1 lb) baby leeks, trimmed
3 tbs olive oil
1 lemon, cut into wedges
sea salt and black pepper
Preparation
Mix together the flour and Fish Seasoning. Pat the fish on both sides with the seasoning, set aside. Throw the potatoes into a saucepan and boil for 15 minutes, until softened. |

Meanwhile, heat a ridged griddle pan and cook the leeks,drizzled with the oil for 5 minutes, turning occasionally.Push the leeks to one side to make space for the fish.
Sear the fish for 5 minutes, turning once. Mash the potatoes with the seasoning and half the butter. Spoon on to plates and place the fish over the leeks. Melt the remaining butter and drizzle over the fish. Garnish with lemon wedges. |

Sear the fish skin side down first, then turn over.The fish will cook evenly and will remain moist if you follow this method. |
