Cobia also known as Rachycentron canadum, Ling, Lemonfish, Crabeater or Cabio. -- long, slim fish with broad depressed head; lower jaw projects past upper jaw; dark lateral stripe extends through eye to tail; first dorsal fin comprised of 7 to 9 free spines; when young, has conspicuous alternating black and white horizontal stripes. Cobia are found around the world in tropic and warm temperate waters. They migrate so their numbers will very with the seasons. They inhabit the warm tropical waters in the winter and move to more temperate waters in the spring, summer and fall. They prefer water temperatures between 68 deg.F and 86 deg. F.

both INSHORE and NEARSHORE inhabiting inlets, bays, and among mangroves; frequently seen around bouys, pilings, and wrecks. .
Size: common to 30 pounds.
Remarks: spawns in spring and early summer; feeds on crabs, squid, and small fish.

Cobia rates among the very best in taste and texture of seafood. The flesh is gorgeous, -- pure white, muscular, mild and flaky. Cobia would also be great steamed, baked or broiled. Or mince the meat, form it into fish balls bound with egg white and drop it into rice noodle soups.
